Sauteed tomatoes with injera - ቲማቲም ለብለብ / ቲማቲም ወጥ- ፈጣን ምሳ/እራት

3 tomatoes, large slices
1 medium onion
2 jalapenos
1 spoon garlic paste (chopped garlic, or garlic powder can work as well)
3 spoon berbere (Ethiopian spiced paprika)
salt and pepper
1/3 a cup cooking oil
How to make it:
Sautee chopped onions with oil and add your garlic.
Add the berbere and cook the onions with it.
Then add the large tomato slices and continue to cook. Easy when stirring it, we don't want the tomatoes get too cooked and soft or becoming a paste or sauce. No need to add water. The tomatoes and onions juice makes it a nice and saucy tomatoes tibs. We don't want it to be too much like a stew, but a tibs (sauteed).
Cook it for about 5 min. Tomatoes don't need to be cooked so much.
Then add salt as needed.
Add jalapenos just before turning of the heat. It tastes better as they are lightly cooked, not too cooked.
Then serve it with injera, rice, bread or pita bread.
