Delicious vegan stew with tofu |ቶፉ አሰራር - ምርጥ የፆም ስልሲ - Ethiopian style
Tofu is a food prepared from soy milk and then pressing it shaped into solid white blocks. It can be made soft, firm, extra firm or super firm. It is often seasoned or marinated to fit different kind of dishes and its flavors. It has spongy texture, and it absorbs other spices and their flavors.
Tofu has protein content. It is a perfect source of vegetarian protein, one 1/2 cup serving of raw, firm tofu contains 10 grams of protein. it also has Calcium and Iron content.
ቶፉ ከሶይ /አኩሪ አተር የሚሰራ ሲሆን ተጨምቆ (press ተደርጎ) የሚወጣ ምግብ ነው:: ለስላሳ ና ደረቅ በመሆን ሱቅ ውስጥ ይገኛል.
Ingredients:
1 pack of firm or extra firm tofu
3 red or yellow onions
2 tomatoes
4 tsp berbere (Ethiopian paprika)
1 tablespoon garlic power
1 tablespoon cardamom power
1/4 cup cooking oil
salt and pepper
How to make it:
Remove water from the tofu pack and slice the tofu into medium cubes
Chop onions and tomatoes
Start cooking the onions with oil
Add the berbere (Ethiopian paprika), garlic power, cardamom power, salt and pepper
Continue to cook until the onions are semi cooked.
Add the tofu cubes. When stirring you can break the cubes apart. As they cook, they look like እንቁላል ወጥ (Eggs wot).
Cook it for about 10 min. No need to add water (መከለስ አያስፈልግም)።
Enjoy with injera or bread or rice or pita bread.
