Bulgur breakfast

Bulgar making for breakfast - Ethiopian style - barley and wheat bulgur

Bulgur is a great, healthy and quick addition to any meal. It can be breakfast, lunch or dinner, or even snack. It can be prepared from 100% whole wheat or barley. It is cracked grain that is made to decrease cooking time. 

Health benefitsfiber, iron, protein and vitamin B-6, good carbohydrate (NOT refined carbohydrate).
Helps to lower the risk of developing cardiovascular disease. 

     



Ingredients

1/2 cup of whole wheat bulgar
1/2 cup of barley bulgar

Don't use fine bulgur for this recipe. Fine bulgar takes little to no cooking time. It can also be made with simply soaking. 

2 cups of water 
3tsp Olive oil
1tsp Salt
1tsp Kibe (Ethiopian clarified & spiced butter)
1tsp Mitmita (Ethiopia chili powder) 


How to make it

Wash bulgar grains very well until you get clear water
Add 2 cups of water and 3 tsp olive oil (any cooking oil) and stir it.  
Bulgar to water ratio is 1: 2  
(1 cup of bulgar with 2 cups of water, and 2 cups of bulgar with 4 cups of water...and so on...)

Then add 1 tsp of salt (of as you need it)
Bring it to boil on stove top and simmer with closed lid for about 10 min. Do not stir it. 
Turn off the heat just before it is too dried cooked and before it finished its water. 
Close back the lid, remove from heat and keep it for about 10 min to let it cool down. 
Return to it and you will find it nice and fluffy.

Prepare to serve: 
Melt Kibe (clarified butter) or olive oil to make it purely vegan with Mitmita (chili powder) as needed. 
Add the fluffy bulgar and mix it well.

Make your favorite tea and it is ready to serve.
