"Bula" false banana -

How to make "Bula" porridge - false banana flour (የቡላ ገንፎ - ልዩ አሰራር)

Bula is a porridge like food that is made from white Enset plant (false banana) flour. Enset is harvested in Ethiopia and prepared to be used as flour. To make this flour, the stem and leaf sheaths of the plant are scraped into a soft and wet pulp. The juice is squeezed out of it, and let it evaporate down to a white powder.

This flour powder can be stored for years outside of refrigerator. It is rehydrated with water to make porridge or it can be made into a hot thick drinkable meal (Atmit) (like oatmeal) with milk and honey. It's also used to prepare Genfo to mix it with barley flour prepared to eat it with berbere (paprika) and seasoned butter .
